Z Trim is a complex carbohydrate - a non-lignin, insoluble dietary fibre containing cellulose and hemi cellulose. It contributes zero calories to product formulation, adds healthy fiber while maintaining excellent taste, texture, appearance and overall finished product acceptability.

Designed as a fat replacement ingredient Z Trim is derived from oat and comes as a fine powder which can be used in either powder or gel format depending on application. As Z Trim competes with water if added as a powder it is recommended that where possible Z Trim is added in gel format. The gel is created by mixing powder and water at high speed. Dosage rate is between 2 - 15% gel depending on final product application and gels are generally prepared at a similar viscosity to the fat which is being replaced to allow for easy incorporation into the mix.

Z Trim is an excellent fat replacement for baked goods replacing butter, margarine or oil while reducing calories, saturated and trans fat levels and increasing fiber content. Its incorporation in biscuit formulations will also reduce potential breakage. Application trials to date indicate that fat substitution rates of up to 25% can be achieved in most biscuits and cake applications with out significant impact on physical and sensory qualities with potential to increase substitution rates to 50% but with some changes to organoleptic characteristics. Fat fillings can also be formulated using Z Trim thereby offering further calorie and fat reduction potential.

Z Trim can also be used in sauces, dressings, mayonnaise, dips, cream cheese, ice cream, yoghurt, dairy beverages, snack foods, fried and processed meat products.

Z Trim also acts as a fat barrier during frying and can be included in batters, breadings, and fried snack food applications. It works well in high and low moisture systems, is ph and heat stable has strong emulsifying potential and is taste neutral. It is GMO free and can be labeled as oat fibre.
